At about 4 weeks, the redness of the stem has disappeared and will not reappear until the leaves get much larger. You can begin to cut and eat at this stage and the leaves will regrow. The leaves at this stage are soft and go well in a salad. Click to hide.

The Kale can be grown as a loose sprout, it will give you that lovely pink colour in the stem, however it is a little slower then most other sprouts grown this way and the seeds germinate at different stages, so I would not recommend them to be used this way, or perhaps give them 2 days head start, or just sprout a little longer than normal before storing in the fridge, they will continue to grow in the fridge. Kale is slow to sprout taking approximately 2 weeks, as against alfalfa, broccoli which take about a week, see pictures, probably best to sprout as a micro green where you just picking the young leaves.
