Field Pea seed, sometimes called sprouting Snow Pea, there are many different varieties some darker. they are called FieldPea, because they are mainly used as cow feed and replenishing nitrogen into the soil at the same time, this is why they are so cheap and as stated before what you generally find in restaurants, it has its place but certainly not in salads . Field Pea (Au) seeds for sprouting. (Sometimes called Sprouting Snow Pea, much less leaf then real Snow Pea but cheaper). If you want to use these in a salad you need to cut them before one week or just trim the top of the leaves because the stalk becomes chewy, as you probably noticed at the restaurant (to note this is not the case with the real SnowPea). But if you want to use these for a smoothly or for cooking then the chewy nature of the stalk becomes less of an issue and they are very good value.
